Southern Buttermilk Biscuits

Take 2 cupfuls of flour, sifted before measuring, 1 teaspoonful of baking powder, 1 teaspoonful of salt, ½ teaspoonful of baking soda. Mix and add 3 level tablespoonfuls of shortening, pinching it into the flour as lightly as possible.
When the oven is ready for baking add one cupful of buttermilk and stir as lightly as possible to a soft dough. Toss on a lightly floured breadboard, cut and roll to the desired thickness, and cut into biscuits. Place the biscuits on a baking sheet. Do not allow them to touch each other. Bake in a hot oven.
