Claudette Colbert's Raw Vegetable and Sour Cream Salad

I don't think I would exactly call myself a vegetarian—but there are times that I don't feel like eating meat. Here is a salad that is very delicious—easy to prepare—it's also healthful—and good for the figure.

1 celery heart and stalk (diced)

1/2 boiled potato (diced)

10 small radishes (diced)

1 or 2 young turnips (diced)

1 young beet (diced)

1 tomato (diced)

1/2 cucumber (diced)

1/2 onion (diced)

1/2 cup new peas

1 or 2 young carrots (diced)

1/2 crisp green pepper (diced)

1/2 cup bean sprouts

1 pint sour cream

paprika, lettuce leaves, chopped parsley or spinach

Place the following raw ingredients in a bowl: celery stalk and heart, white rose potato, radished (crisp), turnip, beet, tomato, cucumber, onion (red or white), lettuce leaves, peas, carrots, green pepper, bean sprouts—dice the vegetables as you place them in the bowl, then mix them well together and place portions on lettuce leaves—then cover with a generous portion of thick sour cream and sprinkle with a dash of paprika and finely chopped parsley or spinach.

This makes two large portions.
